  • 6 chicken drumsticks
  • 5-6 small yellow potatoes, halved
  • 3 large carrots, peeled & chopped into chunks
  • 1 yellow bell pepper, roughly chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper (or to taste)
  • 2 tbsp fresh parsley, chopped (for garnish)

Method
 

  1. Preheat & Prep: Preheat your oven to 200°C (400°F) and lightly grease a large baking dish or baking sheet.
  2. Make the Marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, smoked paprika, salt, and black pepper.
