Let’s be honest: we all have those busy evenings where the mere thought of washing a mountain of dishes is enough to make you reach for your phone and order takeout. We’ve all been there. But what if I told you that you could have a comforting, incredibly flavorful, home-cooked dinner on the table with barely any cleanup? Enter your new weeknight best friend: this easy one-pan baked chicken with herb potatoes and garlic butter green beans.
This recipe is the ultimate cozy comfort meal. It delivers everything you want in a hearty dinner—juicy, heavily seasoned chicken breast, perfectly roasted golden potatoes, and vibrant, tender-crisp green beans—all cooked in a way that maximizes flavor and minimizes your time standing at the sink.

Why You Will Love This Easy Chicken Dinner
There is a specific kind of magic that happens when you bake your main protein and your starchy sides in the exact same dish. The herb-infused pan juices from the chicken gently mingle with the potatoes, elevating them from a simple side dish to a savory, flavor-packed bite. Plus, having an all-in-one meal means you aren’t juggling four different pots on the stove while trying to set the table.
It’s practically foolproof. Whether you are meal-prepping for the week ahead or cooking for a hungry family on a Tuesday night, this recipe scales beautifully and reheats like a dream.
The Secret to Perfectly Juicy Chicken
Chicken breasts often get a bad reputation for drying out in the oven, but we are fixing that today. The trick here is twofold: a robust dry rub and a touch of moisture at the bottom of the pan. We are coating these chicken breasts in a mouthwatering blend of smoked paprika, garlic powder, onion powder, and dried oregano.

By adding just a splash of chicken broth or light cream to the bottom of the baking dish, you create a steamy, savory environment. This keeps the chicken incredibly juicy while creating a delicious, built-in pan sauce that you will want to spoon over absolutely everything.
Crispy Herb Potatoes and Garlic Butter Green Beans
You can’t have a classic meat-and-potatoes dinner without stellar sides. We are using thick wedges of potatoes tossed in olive oil and rosemary. They bake right alongside the chicken, soaking up all that incredible garlic-herb goodness while getting wonderfully crispy on the edges.

To balance out the richness of the chicken and potatoes, we finish the meal with fresh green beans. While the chicken rests, the green beans get a quick steam and are tossed in a fragrant pan of melted garlic butter. It adds the perfect pop of color and a fresh, buttery crunch that ties the whole meal together.

Ingredients
Method
- Prep the oven and dish: Preheat your oven to 200°C (400°F). Lightly grease a large glass baking dish or sheet pan.
- Season the chicken: In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper. Rub this spice mixture evenly over the halved chicken breasts. Set aside.
- Prep the potatoes: Toss the potato wedges with a drizzle of olive oil, dried rosemary (or thyme), salt, and pepper. Spread the potatoes out on one half of the prepared baking dish.
- Bake the chicken and potatoes: Place the seasoned chicken breasts on the empty half of the baking dish. Carefully pour the 100 ml of chicken broth (or light cream) around the chicken—do not pour it directly on top so you don't wash off the spices. Bake uncovered for 30–35 minutes, or until the chicken reaches an internal temperature of 75°C (165°F) and the potatoes are golden and tender.
- Cook the green beans: While the chicken and potatoes are in their final minutes of baking, steam the trimmed green beans for 4–5 minutes until they are tender-crisp.
- Sauté the green beans: In a skillet over medium heat, melt the butter and sauté the minced garlic for about 1 minute until fragrant. Toss the steamed green beans into the garlic butter, season lightly with salt, and cook for 2 more minutes.
- Serve: Once the chicken and potatoes are done, remove from the oven. Slice the chicken and spoon some of the savory pan juices over the top. Serve immediately alongside the roasted potatoes and garlic butter green beans. Garnish with chopped fresh parsley.
