Grilled Chicken and Avocado Power Bowl

Ingredients
  

  • 2 chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • Salt & black pepper to taste
  • 1/2 tsp chili flakes (optional)
  • 4 cups chopped romaine or mixed lettuce
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup corn kernels (cooked or canned)
  • 1/2 cucumber, thinly sliced
  • 1/2 cup fresh avocado mash (or guacamole)
  • 1/2 tsp chili flakes (for topping, optional)

Method
 

  1. Start by rubbing the chicken breasts with olive oil, paprika, garlic powder, cumin, salt, pepper, and chili flakes, if using.
  2. Grill or pan-sear the chicken over medium-high heat for about 6-7 minutes on each side until fully cooked and beautifully charred. Once done, let it rest for a few minutes before slicing.
  3. While the chicken cooks, wash and dry your lettuce. Slice the cherry tomatoes in half, slice the cucumber, and prepare the corn.
  4. Divide the chopped lettuce evenly between two serving bowls.
  5. Arrange the sliced chicken, cherry tomatoes, corn, cucumber, and a generous scoop of avocado mash in distinct sections on top of the lettuce.
  6. If you like a little kick, sprinkle with extra chili flakes and serve immediately!

Notes

Swap the chicken for grilled shrimp or tofu for a tasty twist!
Add black beans or quinoa for extra protein and fiber.
Spice it up by mixing some chopped jalapeƱos into your avocado mash.
Top with a squeeze of fresh lime juice for an extra burst of citrus.
