  • 1/2 tsp chili flakes (optional)
  • 4 cups chopped romaine or mixed lettuce
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup corn kernels (cooked or canned)
  • 1/2 cucumber, thinly sliced
  • 1/2 cup fresh avocado mash (or guacamole)
  • 1/2 tsp chili flakes (for topping, optional)

Method
 

  1. Start by rubbing the chicken breasts with olive oil, paprika, garlic powder, cumin, salt, pepper, and chili flakes, if using.
