- Cook the Pasta: Start by cooking the rigatoni according to the package instructions until al dente. Once done, drain well and set aside.
- Sear the Steak: In a large skillet, heat the olive oil over medium-high heat. Generously season the steak tips with salt and pepper to build the flavor base.
- Brown the Meat: Add the steak pieces to the hot skillet and cook until beautifully browned, about 3-4 minutes on each side. Once a dark crust forms and they are seared to your liking, remove the steak from the skillet and set aside on a plate.
- Sauté the Garlic: In the same skillet (keep those flavorful beef drippings!), add the minced garlic. Sauté for about 1 minute until highly fragrant.
- Build the Sauce Base: Reduce the heat to medium-low. Pour in the heavy cream and whole milk, stirring constantly and scraping up any browned bits from the bottom of the pan until well combined.
- Melt the Cheese: Gradually stir in the shredded mozzarella and grated Parmesan. Continue to stir gently until the cheeses are completely melted into a smooth, deliciously creamy sauce.
- Combine and Coat: Toss the cooked rigatoni and the rested steak bites (along with any juices on the plate) back into the skillet. Mix everything well to ensure the pasta and meat are evenly coated in the cheesy goodness.
- Garnish and Serve: Garnish the dish with fresh chopped parsley for a pop of color and freshness. Serve immediately while warm. Enjoy!
