Smothered Cheesy Beef Enchiladas

Ingredients
  

  • 1.5 lbs ground beef (80/20)
  • 1 packet (1 oz) taco seasoning (or chili powder, cumin, garlic powder, salt)
  • 8 medium flour tortillas
  • 2 cups red enchilada sauce (divided)
  • 2.5 cups shredded sharp cheddar cheese (divided)
  • 1/4 cup sour cream (for garnish)
  • 1/3 cup fresh pico de gallo or diced tomatoes (for garnish)
  • 2 tbsp fresh cilantro, finely chopped (for garnish)

Method
 

  1. Preheat oven to 375°F (190°C). Spray a 9x13-inch baking dish with non-stick spray.
  2. In a large skillet over medium-high heat, brown ground beef until fully cooked. Drain excess fat.
  3. Add taco seasoning and 1/4 cup of red enchilada sauce to the beef. Stir well and cook for 2 minutes.
  4. Pour 1/2 cup of red enchilada sauce into the bottom of the prepared baking dish.
  5. Warm tortillas in the microwave for 20 seconds to prevent cracking.
  6. Fill each tortilla with about 1/3 cup of seasoned ground beef and a sprinkle of cheddar cheese. Roll tightly and place seam-side down in the dish.
  7. Pour remaining enchilada sauce evenly over the top of the rolled tortillas.
  8. Top generously with remaining shredded cheddar cheese.
  9. Bake uncovered for 20 minutes until cheese is completely melted and bubbly.
  10. Garnish with sour cream, diced tomatoes, and chopped cilantro before serving.
