Ingredients
  

  • 1.5 lbs chicken breasts, cut into 1/2-inch strips
  • 1 large red bell pepper, sliced into strips
  • 1 large green bell pepper, sliced into strips
  • 1 large yellow onion, sliced into strips
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Warm flour tortillas, lime wedges, and sour cream for serving

Method
 

  1. Prep the Oven and Pan: Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with aluminum foil for easy cleanup.
  2. Season the Ingredients: Place the sliced chicken strips, bell peppers, and onions directly onto the prepared baking sheet.
  3. Drizzle and Toss: Drizzle the olive oil over the chicken and vegetables. Sprinkle the chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper evenly over the top. Use your hands or tongs to toss everything together until well coated, then spread the mixture into a single, even layer across the pan.
  4. Roast: Bake in the preheated oven for 18 to 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C) and the vegetables are tender with slightly charred edges.
  5. Optional Broil: If you prefer more color on your peppers, turn the oven to broil for the last 2 minutes, keeping a close eye on the pan to prevent burning.
  6. Serve: Remove from the oven and serve immediately with warm tortillas, fresh lime wedges, and your favorite toppings.
