Preheat oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Roll out dough: Unroll the pizza dough onto the parchment paper. Stretch it gently into a large rectangle, about 10x14 inches.
Layer the filling: Layer the provolone slices down the center third of the dough. Top with the sliced ham, folding the slices slightly for extra volume. Sprinkle the shredded mozzarella evenly over the ham.
Fold the dough: Fold the long sides of the dough over the filling, overlapping them slightly in the center to seal. Pinch the ends closed and tuck them under the stromboli to ensure the cheese doesn't leak out. (Alternatively, use a knife to cut 1-inch strips along the sides and braid them over the center).
Prepare garlic butter: In a small bowl, whisk together the melted butter, garlic powder, and dried parsley.
Brush and bake: Brush the garlic herb butter generously all over the top and sides of the stromboli. Sprinkle with grated parmesan cheese.
Bake: Bake for 18-22 minutes, or until the top is deeply golden brown and the cheese is bubbling.Cool and slice: Remove from the oven and let it rest for 5 minutes before slicing. This allows the cheese to set slightly. Serve warm with marinara or ranch for dipping.
