Creamy Cheesy Steak Bites & Spinach Tortellini

Ingredients
  

  • 20 oz cheese tortellini (fresh or refrigerated)
  • 1 lb steak (sirloin or ribeye), cut into bite-sized cubes
  • 2 cups fresh spinach
  • 1 pinch salt (to taste)
  • 1 pinch black pepper (to taste)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups shredded or freshly grated parmesan
  • 1 pinch fresh parsley (optional, for garnish)
  • 1 pinch red pepper flakes (optional, for garnish)
  • 1 pinch cracked black pepper (optional, for garnish)

Method
 

  1. Cook the tortellini: Bring a pot of salted water to a boil and cook the tortellini according to package directions. Drain and set aside.
  2. Sear the steak: Season the steak cubes with salt, black pepper, garlic powder, and smoked paprika. In a large skillet over medium-high heat, heat the olive oil. Sear the steak bites for about 3–5 minutes or until browned and cooked to your liking. Remove from the skillet and set aside.
  3. Cook the spinach: In the same skillet, toss in the fresh spinach. Sauté for 1–2 minutes until wilted. Remove and set aside with the steak.
  4. Make the garlic cream sauce: In the skillet, melt the butter and add the minced garlic. Cook for about a minute until fragrant. Then, stir in the heavy cream and whole milk. Let it simmer and reduce for 3–4 minutes.
  5. Add the cheese: Gradually stir in the parmesan cheese until the sauce becomes silky and thick. Taste and adjust seasoning with salt and pepper.
  6. Bring it all together: Return the seared steak, wilted spinach, and cooked tortellini to the skillet. Toss gently to coat all ingredients in the creamy sauce.
  7. Garnish and serve: Finish with a sprinkle of fresh parsley, cracked black pepper, and red pepper flakes if you enjoy a little heat.

Notes

For added flavor, consider marinating the steak in olive oil, garlic, and herbs before cooking.
Swap out the spinach for another green like arugula, or add sun-dried tomatoes (as seen in our featured photos) for a different taste.
If you prefer a lighter version, use half-and-half instead of heavy cream.
For an extra kick, add sautéed onion or mushrooms when cooking the steak.
