  • 1/2 tsp black pepper
  • 3 tbsp olive oil
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tbsp lemon juice

  2. Stuff each pocket generously with asparagus spears and about 1/2 cup of shredded mozzarella. If needed, secure them with toothpicks to keep all that deliciousness intact.
  3. Season the outside of the chicken evenly with smoked paprika, Italian seasoning, garlic powder, salt, and black pepper. Get that flavor all over!
  4. In a cast iron skillet, heat the olive oil over medium-high heat. Once hot, sear the chicken for 4-5 minutes on each side until it is beautifully golden brown.
  5. Add the butter and minced garlic to the skillet, letting it melt. Baste the chicken with the garlic butter for about 1 minute.
  6. Pour in the chicken broth and lemon juice, then let it simmer for 8-10 minutes. You want the chicken to be cooked through (reaching an internal temperature of 165 F) and the sauce to reduce slightly.
  7. Finish by garnishing with fresh parsley. Serve right in the skillet, drenching the chicken in that luscious pan sauce.

Notes

Variations: If you want to switch it up, try adding fresh spinach or chopped sun-dried tomatoes along with the asparagus for extra flavor.
