Baked Cheesy Chicken Salad Croissants

The Ultimate Cozy Upgrade: Baked Cheesy Chicken Salad Croissants

If your household is anything like mine, you probably have a go-to chicken salad recipe that gets thrown together for quick lunches. But let me tell you, when the weather gets a bit cool or you just want something that feels like a warm hug, a cold sandwich is not going to cut it. That is why I started making these warm, gooey, baked cheesy chicken salad croissants. They take everything you love about a classic chicken mixture and bake it inside soft, flaky crescent dough with enough cheese to make everyone run to the kitchen.

I have made versions of this easy chicken salad recipe for years, often using up leftovers from a Sunday roast or grabbing a rotisserie chicken from the store when I am short on time. Feeding a hungry family on busy weeknights means I need shortcuts that do not taste like shortcuts. Wrapping the seasoned chicken salad inside crescent dough and topping it with a generous layer of cheese before baking gives you a quick chicken dinner that feels incredibly special.

Why Baking Your Chicken Salad Changes Everything

Most folks think of chicken salad as a cold picnic food. But when you mix shredded chicken with a touch of cream cheese or mayonnaise, wrap it in dough, and let the oven do its magic, the filling gets incredibly rich and moist. The key here is the cheese pull. Using a good, low-moisture mozzarella inside the pocket guarantees that when you pull these apart, you get those beautiful, stretchy ribbons of cheese that kids and adults alike go crazy for.

One thing that makes a big difference is how you prep your chicken. I prefer shredded chicken over cubed for this particular recipe because it holds the moisture better and binds with the melted cheese inside the crescent wrapper. It creates a cohesive, savory filling that does not tumble out of the roll when you take a bite.

Simple Tips for the Best Baked Crescents

Do not overfill the dough. It is tempting to pile a mountain of chicken into each triangle, but a modest scoop along with your cheese slice makes it much easier to seal. If you leave the seams wide open, the cheese will escape onto the pan before the dough has a chance to bake through. A little leakage is fine—in fact, those crispy, burnt cheese bits on the edges of the pan are usually what my family fights over first!

To get that beautiful bakery-style finish on top, I like to sprinkle a little extra cheese right on the dough during the last few minutes of baking. It melts into a gorgeous, speckled crust that gives a wonderful texture to the flaky crescent layers underneath.

Total Time 30 minutes
Servings: 6

Ingredients

  • 2 1/2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 3 oz cream cheese, softened
  • 1/4 cup mayonnaise or Olive Oil Miracle Whip
  • 1/3 cup celery, finely chopped
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste
  • 2 cans (8 oz each) refrigerated crescent roll dough
  • 6 thick slices mozzarella cheese
  • 1/2 cup shredded mozzarella cheese (for the toasted topping)

Method

  1. Prep the oven and pan: Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or spray lightly with non-stick cooking spray.
  2. Mix the filling: In a medium bowl, combine the shredded chicken, softened cream cheese, mayonnaise, finely chopped celery, garlic powder, salt, and black pepper. Stir until the mixture is well combined and holds together.
  3. Prepare the dough: Unroll the crescent dough. If using triangles, press two triangles together to form a rectangle, or use crescent sheet dough cut into 6 equal portions.
  4. Stuff and seal: Place one slice of mozzarella cheese in the center of each dough portion. Top with a generous scoop (about 1/3 cup) of the chicken mixture. Carefully fold the dough corners over the filling, pinching the seams tightly to seal the chicken and cheese inside.
  5. Bake: Place the stuffed rolls seam-side down on the prepared baking sheet. Bake for 12 to 15 minutes, or until the dough is light golden brown.
  6. Add the cheesy crust: Carefully sprinkle the shredded mozzarella cheese over the top of each roll. Return to the oven for an additional 3 minutes, or until the topping cheese is completely melted, bubbling, and beautifully browned.
  7. Serve: Let cool for 5 minutes before serving to let the cheese set slightly. Serve warm to enjoy that incredible cheese pull!
