Ingredients

  • 2 tbsp vegetable oil
  • Salt and pepper (to taste)
For the Rice:
  • 150 g long-grain white rice
For the Saucy Chicken:
  • 2 chicken breasts (boneless, skinless, diced)
  • 1 tbsp olive oil
  • 1 onion (chopped)
  • 1/2 red bell pepper (diced into strips)
  • 1/2 green bell pepper (diced into strips)
  • 2 garlic cloves (minced)
  • 2 tbsp tomato purée
  • 250 ml chicken stock
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp chili flakes (optional, for heat)
  • 1 tbsp cornflour (mixed with 2 tbsp cold water)
  • Fresh parsley (chopped, for garnish)

Method
 

  1. Roast the Wedges: Preheat your oven to 220°C (428°F). Toss the potato wedges with vegetable oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 25-30 minutes, turning halfway through, until crispy and golden brown.
