Why the Oven Temperature Matters

A common mistake is baking thin cuts of meat for too long at a low temperature. When you bake pork chops that are only half an inch thick at 350 degrees for forty minutes, they turn incredibly tough. Instead, we are going to increase the heat to 400 degrees. This higher temperature toasts the panko and melts the parmesan quickly. The meat cooks through in about fifteen to eighteen minutes. You get a beautiful golden crust without drying out the interior.

Setting Up Your Breading Station

Organization makes this process much easier. You will need two shallow bowls. Put your beaten eggs in the first bowl. Mix your panko breadcrumbs, grated parmesan cheese, and simple seasonings in the second bowl. Dip each chop into the egg first. Let the excess drip off before pressing it firmly into the dry mixture. Pressing the crumbs into the meat ensures the coating sticks properly during baking.

Checking for Doneness

Pork is safe to eat when it reaches an internal temperature of 145 degrees. I highly recommend using a digital meat thermometer. Insert it into the thickest part of the meat. Once it hits that temperature, take the pan out of the oven immediately. Let the meat rest for three to five minutes before serving. The juices will redistribute.   • 1 cup panko breadcrumbs

  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp Italian seasoning
  • Cooking spray

Method
 

  1. Preheat your oven to 400°F. Line a rimmed baking sheet with aluminum foil and place a wire rack on top. Spray the wire rack generously with cooking spray.
  2. Crack the eggs into a shallow bowl and beat lightly with a fork.
  3. In a separate shallow bowl, mix the panko breadcrumbs, grated parmesan cheese, garlic salt, black pepper, onion powder, and Italian seasoning until well combined.
  4. Pat the pork chops dry with a paper towel. Dip one pork chop into the beaten eggs, letting the excess drip off.
  5. Transfer the chop to the breadcrumb mixture. Press the mixture firmly into both sides of the meat to ensure an even coating.
  6. Place the breaded pork chop onto the prepared wire rack. Repeat with the remaining chops.
  7. Lightly mist the tops of the breaded chops with cooking spray to help them brown.
  8. Bake for 15 to 18 minutes, or until the thickest part of the pork reaches 145°F on a meat thermometer and the crust is golden brown.
  9. Remove from the oven and let rest on the rack for 3 minutes before serving.
